Surprise in the jar

After an intense day full of quizes, grades, presentations and what not, I was ready for something sweet, and I have to say that both Stacey and I deserved it.
We were doing a presentation about my externship at Demel and boy, that was a good one. I wish you could've seen that + we baked vanillakipferl for the whole class. They were gone in a second. You can only imagine how much they enjoyed it :))

And so, we went to our favorite Apple Pie Bakery Cafe, and chose something to satisfy our sweet tooth. I decided on having this cute little jar filled with Maple sugar custard with creme fraiche on top. Since I like all of those ingredients, the taste wasn't even in question, it was absolutely fantastic. The sweet and chilled maple custard was rounded with a spoonful of creme fraiche. mmm.
Stacey on the other hand got a Vanilla Semi Freddo, sandwiched between two huge blocks of chocolate chip cookie which was very intese. No recommendations for that one.

As far as classes are concerned, let me just say that I have 3 more days to go. Wohooo.
Oh, by the way...have I ever mentioned that we have a mandatory dress code? You have to wear business casual (meaning NO jeans), one ring, one watch, small earings, no weird hair color, no beard for guys....That's how we roll.

Winter is being pretty harsh here in Hyde Park, but studying, studying, studying is keeping me warm, that's for sure.
I'm doing well, there is one more week to go, and then.......party time!!! :))

Pick-me-up

This is a Tiramisu or pick-me-up in translation (which I did, hehe) from our Apple Pie bakery cafe. It was a Valentine's day present for Stacey since it's her faaaavourite dessert and I didn't mind having a few spoonfulls either...
It is served in a small transparent plastic cup, very neat and presentable. The Tiramisu itself is very good, except that I would add more Savoiardi (lady fingers) and of course, more coffee. A real espresso would do the trick.

I have a long weekend! I am sooo excited to spend 3 days doing homework, wahoooo!

I wish you all a happy valentines day! Show your love to all of your dear ones, share it, and.......don't forget the chocolate! :))
Last night Stacey and I attended an aphrodisiac coctail party (no alcohol to be clear on that) here at school and we had so much fun. We had 5 different courses as bite size portions and boy....it was good.
And just so you know, weather is terrible. We had a snow storm, the roads are still frozen and if it wasn't for Stacey, I would've been on the ground numerous times by now.

School is going well, lots of new projects and exams on the way, which is the reason for not blogging as much. Two more weeks and L block is over!!

Grand Buffet

I was waiting for this day to come since I got here! Grand buffet is, as the word says, a buffet that represents most of the kitchens and bakeshops in my school. It is held at the end of each block (every 3 weeks) in our dining room. I have to say that the highlight of the whole buffet was the bread. Seriously, that is my favourite part. Oh sorry, forgot the desserts...They are always interesting to see, but this time the sugar work caught my attention. Big time.
As you can see on the photo below, this is some pretty nice work, don't you think? I will be in sugar work very soon and that's something I am really looking foward to! :)

School is going well so far, very demanding though. I am half way through L block right now and I passed one exam today which is restaurant Law, the hardest subject I had so far! I still can't believe it.
Other then that, I am learning a lot, and all of this is, and will be very beneficial to my future career. Right now I have a task for the Menu class to create 24-item dessert menu which is fun to do, but with maaaany rules to follow. It is unbelieveable how little mistakes in the menu presentation can change comepletly the customer's point of view.

I am off to bed now, tomorrow's the Nutrition mid term exam and another quiz from Purchasing food and controlling costs, so.....Wish me luck! ;)

FARQUHARSON HALL

The Culinary Institute of America was established 1946 and this particular Hall, once called the Alumni Hall, is today our dining room. If you wish, you can read more about it It look exactly as Harry Potter's Great hall and when visitors take tours at our school, the tour guides always compare them. I comepletly agree. I hope I can give you at least a part of that sensation and how it feels to be at the CIA. It is such a great feeling to sit down and eat in an atmosphere like that. There are so many kitchens you can eat from, you always have so many different types of desserts, and that all comes from student kitchens and bakeshops! That is a part of our everyday class! ;)
For example, I went to the Mediterranean kitchen and usually there is food from different countries that change every 3 days. Today was Italy and there were so many good things to choose from, but I felt like eating fish so I had sea bass with some veggies and these enourmous beans (as never seen before). They had freshly made pizza, pastas and also gnnochi with creamy sun dried tomatoes that Stacey had. PLUS, you always have all kinds of different anti pasti. mmmmm. I thought of you all and wished I had my camera with me.
